Question: How long can hard-boiled eggs sit out? I took some out of the fridge to make deviled eggs, but got distracted and the hard-boiled eggs were left out for about 5 hours. Are they still safe?
Answer: Unfortunately your eggs are not safe. You can safely leave hard-boiled eggs out at room temperature for two hours — or one hour if the temperature is above 90 degrees Fahrenheit — says the United States Department of Agriculture.
The reason is that bacteria grow rapidly when hard-boiled eggs are kept at temperatures between 40° F and 140° F. If hard-boiled eggs have been left out of the fridge for longer than 2 hours (or 1 hour above 90° F), harmful bacteria can multiply to the point where the hard-boiled eggs are no longer safe to eat and should be discarded.
