How Long Can You Keep Peeled Potatoes?

 

Question:  How long can you keep peeled potatoes? I’m making mashed potatoes for our holiday dinner and would really like to do the peeling the day before.

Answer: You can safely leave peeled potatoes in the refrigerator for 24 hours. It’s a great way to get a head start on your holiday meal preparation.  

As the Idaho Potato Commission notes, you can keep both whole, peeled potatoes or cut potatoes in the refrigerator. Place the peeled potatoes in a bowl or other container, cover them thoroughly with cold water, then place in the fridge for up to 24 hours. If you refrigerate the peeled potatoes without covering them in water, they’ll still be safe to eat, but they will likely become discolored when cooked.

When you’re ready to cook the potatoes, simply drain them and rinse again with water to remove any excess starch.
