Store at room temperature until ripe, then refrigerate in a plastic bag.
Wrap cut fruit tightly with plastic wrap or aluminum foil before refrigerating, or store in airtight container.
To freeze quinces: (1) Wash, peel, core and slice quinces; (2) Mix 1/2 cup sugar into each quart of fruit and stir until sugar is dissolved; (3) Place in covered airtight containers or heavy-duty freezer bags.
