Wrap tightly in plastic or aluminum foil, or place in covered container or plastic bag.
To freeze: (1) Wash thoroughly and cut into 1 to 1 1/2 inch pieces; (2) Blanch (plunge into boiling water) for three minutes and chill quickly in ice cold water; (3) Drain off excess moisture, package in airtight containers or freezer bags and freeze immediately.
Frozen celery will soften when thawed, and is best used in cooked dishes.
