Raw artichokes do not freeze well; cook before freezing.
To freeze: (1) Wash and cook artichokes; (2) Sprinkle cooked artichokes with a small amount of lemon juice to prevent darkening; (3) Place in covered airtight containers or heavy-duty freezer bags and freeze.
